. 【Ingredients】 4 cupcakes
(Gelatin bubbles)
・powdered gelatin…12g
・cold water…50cc
・4 balloons (7cm in diameter)
・4 skewers
・vegetable oil for coating the balloons
(Muffins)
・unsalted butter …60g
・granulated sugar…60g
・whole eggs …60g
・cake flour…95g (a)
・baking powder…2g (a)
・milk…35cc
(Decoration)
・whipping cream…50g (b)
・non-melting powdered sugar…  1/2  teaspoon (b)
・edible cake toppers…to taste
・raspberry・blueberry …to taste
.
【Preparation】
・Blow up the balloons to the size of the cups. Knot them and slide a skewer into the knot. Wash the balloon and wipe water off. Use paper towel to wipe a thin layer of vegetable oil onto the balloons. ・Combine cold water and powdered gelatin and mix lightly. Let the mixture sit in the refrigerator for 10 mins or longer. ・Soften the butter at room temperature.
・Bring the eggs to room temperature and beat.
・Combine (a) and sift. ・Preheat the oven to 180 ℃ / 350 -360℉. ・Combine (b) in a bowl and whip until soft peaks form.
【How to make】
(Gelatin bubble)
① Melt gelatin over warm water (70-80℃/150-170℉). Melted gelatin should be about 35℃/ 95℉. ② Dip a greased balloon into ①. Tilting the bowl, evenly coat the balloon with gelatin. 
③ Set the skewers into a piece of Styrofoam and dry the balloons (3 hours or longer).
④ Pop the balloons and remove.  By using a pair of scissors, adjust the neck of the balloon to the cup.
(Muffin)
① Using electric beater, cream the butter. 
② Add half of the sugar and beat until the mixture looks whitish.  Add the remaining sugar and beat. 
③ Add 1/3 of the egg at a time. Mix well each time until the mixture looks like mayonnaise. Butter and egg may not blend if they are cold.
④ Add half of (a) and fold into ③ with rubber spatula.  Do the same with the rest of (a). Fold milk in until the batter looks shiny. 
⑤ Pour the batter into the cups. Bake on oven rack for 20-25 mins.
⑥ When muffins cool off, cut off muffin hanging over the edge.

・granulated sugar…20g (b)
・white chocolate shavings…30g
・non-melting powdered sugar…to taste 【Preparation】
・Combine (a) and sift.
・Preheat oven to 170℃ (330-340℉) 【How to make】
① Combine egg whites and half of the granulated sugar in a bowl. Beat 2 minutes with electric beater at high speed. 
② Add the remaining granulated sugar and beat 2 more minutes. 
③ Fold half of (a) into ② with rubber spatula. Repeat this with the rest of (a). ④ Fold milk and vegetable oil into ③ until the batter looks shiny. 
⑤ Pour the batter into the pan. Tap the pan lightly against the counter to drive out air bubbles. Bake on oven rack for 25-30 minutes. 《Point》 Press the batter onto the pan with rubber spatula so the fluffy batter is evenly placed in the pan. 
⑥ Check if the cake is thoroughly baked. Turn the cake upside down on a rack and cool off. 
⑦ Combine (b) in a bowl and beat until soft peaks form. 
⑧ Remove the pan, and spread ⑦ over the cake. 
⑨ Sprinkle white chocolate shavings. Top with powdered sugar. .
The cake is white like snow in winter💓

【Ingredients】 For 6 cupcakes
(Meringue cookies)
・egg whites…30g
・granulated sugar …60g
・food coloring
(Santa Claus) red・orange・black
(Tree) green・yellow・pink (Chocolate cup cake: for 6 cupcakes)
・sweet chocolate …40g (a)
・unsalted butter …440g (a)
・granulated sugar…440g
・whole egg…450g
.
・cake flower…40g (b)
・cocoa powder…10g (b) ・baking powder… 1/2 teaspoon (b)
. ・whipping cream…50g (c)
・sugar…5g (c)
・powdered sugar, cocoa powder…to your taste
.
【Preparation】
・Preheat oven to 100℃ (210℉) for meringue cookies and to 170℃ (330-340℉) for cupcakes.
・Attach piping tips to pastry bags. (Star 8-12 / Round 10/8/2).
・Bring chocolate to room temperature and cut into small pieces.
・Combine (b) and sift. ・Combine (c) in a bowl and whip until soft peaks form. .
【How to make】
(Meringue cookies)
① Combine egg whites and half of the granulated sugar in a bowl.  Put warm water (70-80 ℃ /150-170 ℉) under the bowl and beat for 2 minutes at high speed. 
② Add the remaining granulated sugar and beat 3 more minutes over warm water. 
③ Divide ② for Santa Claus and trees.  Add food coloring and pour into pastry bags. 
④ Spread baking paper on a cookie sheet.  Pipe the meringue onto the cookie sheet and let dry in the oven for about 120 minutes. ※The meringue cookies get soggy easily. Put them in a sealed container after they cool off. .
(Chocolate cup cake)
① Combine (a) in a bowl and melt over warm water. 
② Add granulated sugar and egg and mix.  ③ Add half of (b) and mix well. Do the same with the rest of (b). ④ Pour batter into cups, and bake on oven rack for 20-25 minutes. 
⑤ When the cupcakes cool off, cut off cake hanging over the edge. (Assemble Santa and trees)
① Top cupcakes with (c). Sift powdered sugar over Santa.  Use cocoa powder for trees. 
② Top each cake with meringue cookie.

【Ingredients】 (For 1 cake)
・3 egg yolks…(a)
・granulated sugar…30g (a) ・cake flour…70g (b)
・cocoa powder…15g (b)
・baking powder…1/2 teaspoon (b) ・milk…45cc
・vegetable oil…45g
・granulated sugar…40g
・4 egg whites (Decoration)
・sweet chocolate…40g
・whipping cream…120g
・cocoa powder…to taste
・strawberry, raspberry, blackberry, blueberry …to taste .
【Preparation】
・Combine (b) and sift. ・Preheat oven to 170℃ (330-340℉)
・Melt sweet chocolate in a bowl over hot water (70-80℃ , 150-170℉) and cool off.
. 【How to make】
① Combine (a) in a bowl.  Beat with an electric beater until the mixture takes on whitish color. 
② Add half of the milk and mix well.  Add the remaining milk and mix until well blended.
③ Add half of the vegetable oil and mix well.  Add the remaining oil and mix well again.
④ Add (b) and mix until creamy. 
⑤ Make meringue. Combine egg whites and half of the sugar. Beat for 2 minutes at high speed.
⑥ Add the remaining sugar and beat 1 more minute at high speed. 
⑦ Fold 1/3 of ⑥ into ④ with rubber spatula. 
⑧ Repeat ⑦ twice with the remaining meringue. 
⑨ Pour the batter into the pan. Tap the pan lightly against the counter to drive out air bubbles.  Bake on oven rack for 35-40 minutes. ※Don't open the oven while baking. The cake may shrink.
⑩ Check if the cake is thoroughly baked. Let cool upside down. Tear the pan open along the perforated lines and remove. .
【Decoration】
① Add a quarter of the whipping cream to melted chocolate and mix well.  Repeat this 3 more times with the remaining whipping cream.  Beat the mixture until soft peaks form. ※Put cold water under the bowl to make creamy and smooth chocolate cream quickly. 
② Spread the chocolate cream over the cake. Draw decorative lines with fork.
③ Top with cocoa powder, fruit and cake toppers as you like.
